I'm not the original poster, but I have the same question. On other desktop VOIP software you can select your input device if you have more than one microphone or sound output device present. Here's a screenshot of how this looks in the Skype settings for instance:
This is really important on a desktop because some people would want to use a headset, or external microphone for improved voice quality. It is helpful to be able to override the system defaults. It also makes it hard to use TextNow with interesting audio processing software like Krisp, which helps clear up background noise. I should note that for anyone else who finds this page via Google, if you press option on the Mac keyboard while clicking on the volume icon in the menu bar you can bring up a menu of input and output devices. This can be helpful, but it is global for the computer, so it's not as ideal as being able to select devices within the preferences of the VOIP application itself as noted in my last comment.
